This was a cake I made a couple of times last week. I had seen it on Pinterest and thought it sounded delicious- anything vanilla sounds great to me! :) Of course, I had to add a little bit of my own to the recipe: I couldn't resist throwing in some lemon zest, as I had fresh lemons and I love the flavor they add to vanilla desserts. It was extremely easy to prepare and it turned out very yummy! I had some excellent reviews!
Ingredients:
Cake:
1 c. butter
1 c. water
2 c. sugar
2 c. + 4 T flour
1/2 t salt
1 t soda
2 eggs
1 t vanilla
zest of 1 lemon (optional)
1/2 c. sour cream
Frosting:
1 C butter
6 T evaporated milk
1 t vanilla
4-5 c. powdered sugar
dash of salt
1 c.
pecans, chopped (optional)
Directions:
Put butter and water in a large bowl. Heat in
microwave for 2 minutes. Stir until all the butter is melted. Add
sugar, flour, salt, and soda. Stir with a wire whisk until smooth.
Add eggs, vanilla and lemon zest. Beat well. Stir in sour cream until all is
blended.
Pour into a 11”x17” baking sheet that has been greased and
floured.
Bake at 375º for 20-25 minutes, until cake springs back when lightly touched or toothpick inserted in center comes clean.
Remove from the oven and
make the frosting.
Cook butter and milk for 3-4 minutes in microwave. Add
powdered sugar, vanilla, and a dash of salt. Beat until smooth. Add nuts
and gently spread on warm cake.
Cool and serve.
